In celebration of getting my insulin, and by fortunate happenstance, my brother and his family got back from their trip to Tennessee. They went to The Apple Barn, and brought me back a large apple fritter, which has now been eaten. Oh my god it was sooooooo gooooooood. They slathered it in apple butter, which is my second favorite of the butters.
I started prepping for tacos I'm making tomorrow. Picked up the shrimp, tacos, cilantro, limes, red onion, avocado and sour cream earlier today. Sliced the red onion into thin slices, mixed in lime juice, salt, and ground rainbow peppercorns. For the shrimp I made a marinade of lime juice, lime zest, olive oil, butter, kosher salt, smoked paprika, cayenne pepper, ground cumin, rainbow peppercorns, chipotle pepper, anchor pepper. I'll make a sauce from the sour cream, lime juice, cilantro, diced jalapeno. And a pico from cherry tomatoes, kosher salt, rainbow peppercorns, cilantro, jalapenos. The cherry tomatoes and jalapenos are from the garden. I'll slice and cube the avocado. I'll try to remember to take pics while grilling the shrimp. And the tacos.
Hell yeah, I fucking love tacos! I've ordered the ingredients to make them this week. They're traditional white people tacos, but I love the hell out of them. If I can remember, I'll take pics of that, too. Can't wait to see yours, Ed!
Holy fucking shit... they were so damn good! I almost shot a load on the first bite. Not really, but damn they were amazing. I wound up eating 18 of them. I highly recommend using street taco tortillas, they are the perfect size for them. I used a plastic container for the red pickled onion so I didn't have the onion odor in other dishes. @Coloratura here you go.
I made them by cutting the onion in half, then cutting thin slices. In a bowl juice of half a lime, a small amount of salt, about 1/2 teaspoon of ground black pepper. Let it sit overnight in the fridge.
Okay, I'm doing this. I mean, not this week, but I'm definitely trying this. I love the hell out of pickled anything.
Thinking about it, the lime I used was pretty big. So enough lime juice to just cover the sliced red onion.
